1. In a medium saucepan add the water and the sugar directly in the middle. Heat the mixture till golden brown making sure not to stir or it could crystalise and seize.
2. When it is a good colour, pour in the cream but be careful as it will start to bubble a lot but keep stirring until it settles.
3. Add in the butter and the salt and stir everything together. Pour the caramel into a bowl to help it cool down.
4. Can be poured into a piping bag to decorate cakes, cookie cakes or stirred into buttercream!
